Grab your apron and prepare to dice, stir, cook, knead and bake alongside a professional chef in a stainless steel commercial kitchen that feels like it’s right out of a Food Network episode. Discover a world of sweet and savory from a chef’s perspective and be inspired by cultures around the world. Build your kitchen competence and connect with the real meaning of farm to table.
Each program will give learners a unique opportunity to work alongside professionally trained chefs with a long history of successfully mentoring aspiring young cooks. All Professional Kitchen participants have exclusive cooking access to the Cary Academy professional kitchen and its equipment. Programs will focus on the essential basic kitchen smarts and abilities that all cooks need for food success. Learn how to read and follow a recipe, develop good preparation habits, and develop safe knife handling skills while understanding and demonstrating kitchen safety. Each day cooks will share, appreciate and evaluate each other’s creations as they gather around the community tasting table. To round out the overall experience, summer learners will field trip their way to delicious and locally sourced ingredients, discovering what it takes to find and choose the very best.

Food Truck Kitchen
July 9 – 13 | 8:30 to 4pm
Join Cary Academy’s very own Chef Sam as he unlocks the secrets behind the unmistakable homegrown tastes created by food trucks and street vendors all around the world. Summer learners will explore the local markets to find delicious and locally sourced ingredients, incorporating the farm to table element in their work. From main course to dessert, this program will create dishes including Costa Rican tacos, burgers with pop slaw, frozen bananas with out of the ordinary toppings, and Nieve de Garrafa. The week will conclude with a Skype visit from a California Executive Chef and cookbook author who will answer questions while he shares the story of his journey to success.
American Home Cooking
July 16 – 20 | 8:30am to 4PM
The doors open so come on in and pull up a chair. While in Chef Sam’s kitchen, it’s time to roll up your sleeves and learn how to cook well-loved classic American foods. From scratch. With a twist. Working in teams, summer learners will be coached and challenged to create classics including a signature chicken pot pie with no fail crust, homemade pasta and flatbread, hand stretched mozzarella cheese, jalapeno cornbread, apple pie and tapioca pudding. In addition to being hands-on in the kitchen, chefs will have a virtual visit from a local chef who will answer curious questions and share his or her own personal home cooking story. This no-miss program is sure to be a delicious journey that will continue on into the kitchens of all who participate.
Pastry Chef | All Things Sweet
July 23 – 27 | 8:30am to 4PM
Are you ready to take your baking to the next level? Why settle for cookies and cupcakes when there is a whole world of sweets out there just waiting to be baked into being? This week in the kitchen Chef Catherine will take you on a journey into the heart of dessert as everyone expands their taste buds with surprising new flavor and texture combinations. From Dutch apple pancakes and cronuts to Thai hand rolled ice cream, ingredients and technique will take center stage as bakers unlock the science behind creating scrumptious desserts. We will study the essential elements of baking and learn about what makes dough rise, how to temper chocolate, and how flour selection affects the final product. Build baking confidence through practice, improvisation and tasting and prepare to wow friends and family with all that you learned in the kitchen.
Decorate Like a Cake Boss
July 30 – August 3 | 8:30am to 4PM
Sometimes cake is just a dessert, but sometimes cake is art. Welcome to the week where cake meets art. This program will introduce summer learners to the equipment, ingredients and methods that professionals cake decorators everywhere prefer and use. With an emphasis on design, technique and presentation, bakers will create intricate hand-piped, scratch-made masterpieces that will taste just as good as they look. Leaving no cake undecorated, we will spend our time experimenting with buttercream frosting, fondant, fillings and gum paste. Summer learner will use a step-by- step hands on approach as they practice their way to impressive edible creations covered in flowers, borders, leaves and contemporary designs. Ending the week with style, the group will host friends and family at showing of their own one of a kind works of delicious art.
